Blogmas Day 2 | Cinnamon, Date & Banana Loaf
You may have noticed that my blogmas isn’t daily blogging, who has the time?!
I’ll be posting Tuesdays and Friday until the big day, you can check out my Day 1 gift guide here.
This year I’m focusing on handmade gifts and treats. With some bananas looking a little past their best, it was the only thing to do!
To make this yummy loaf you will need-
- 2 ripe bananas
- 10 ready to eat dates
- 250g self raising flour
- 3 medium free range/organic eggs
- 1/2 tsp baking powder
- 1/2 tsp basking soda
- 2 tsp Maple syrup
- 1 tsp Cinnamon
- 1 tsp Vanilla Essence
Preheat oven to 180 and line your loaf tin with baking parchment.
Chop bananas and 6 dates and blend into puree (Nutribullet works a treat)
Sieve flour, soda and powder into a mixing bowl. Add eggs and puree and mix well
Stir in maple syrup, cinnamon and vanilla.
Chop last 4/5 dates (and whatever else) into pieces and fold into mixture.
*For added yummy, use dried fruits, nuts or cacao nibs at this point!*
Dispense into tin and bake for 40-45 mins, at 30 mins check loaf with a fork to see if its cooked through.
Once booked, let it sit on a cooling rack.
Serve toasted with Avoca Rhubarb & Ginger Jam, Nutella or butter.
A hamper of home made goods would go down a treat with anyone, especially at this time of year when if you’re like me & you can’t stop eating.
I made two and sent one back with my brother for his housemates, I hope they enjoy it 🙂
